You are getting late, now you got to make an easy simple dinner for your family. Get a hassle-free dinner on the table with these quick menus for every day of the week. Why not make Chicken Enchilada Quiche:

Here is the Chicken Enchilada Quiche recipe:

Ingredients: 1 deep dish pie crust, 4 eggs, 1 cup half-and-half cream, 1 1/8 cups cooked, diced chicken, 1 1/2 cups broken corn tortilla chips, 2 cups monterey jack cheese, Pepper to taste, if desired , 1 cup sharp cheddar cheese, 1 cup salsa, 1 (5 ounce) can green chilies and sour cream.

Directions: First, heat the oven to 350°F for a while. In medium sized bowl, beat eggs with wire whisk until blended. Beat in half-and-half. Stir in chicken, chips, both cheeses, 1 cup salsa, the green chiles and salt. Pour into crust-lined pan. Sprinkle pepper over top of filling. Bake the food at 350F for 55 to 60 minutes. Serve with sour cream if possible.
